These Foolproof Instant Pot Eggs are an easy meal prep staple rich in protein, healthy Fats, and choline.
If you're looking for one simple habit that can make healthy eating easier during a busy week, batch-cooking eggs is hard to beat.
Eggs are portable, versatile, nutrient-dense, and require very little preparation. Whether you're packing lunches, building a quick breakfast, adding protein to a salad, or looking for a satisfying snack, having boiled eggs ready to go can save time and make nourishing choices easier.
They're also one of the richest food sources of choline, an often-overlooked nutrient that plays an important role in liver health, brain function, and healthy fat metabolism.
Why Eggs Are More Than Just a Source of Protein
Most people think of eggs as a protein food, and they are. But the yolk is where many of the nutrients are found, including choline.
Choline is an essential nutrient that helps the body transport fat out of the liver. When choline intake is inadequate, fat can accumulate in the liver over time.
Research suggests that many adults are not consuming enough choline, making it one of the nutrients I pay particular attention to in my nutrition practice.
For women in perimenopause and menopause, this becomes even more important. As estrogen levels decline, the risk of developing non-alcoholic fatty liver disease increases. Supporting adequate choline intake through foods like eggs can be one practical way to support long-term metabolic and liver health.
You don't need complicated recipes or elaborate meal prep sessions to support your health.
Having a batch of boiled eggs in the fridge means you always have access to:
High-quality protein
Healthy fats
Choline and other important nutrients
A satisfying snack
An easy addition to salads and meals
It's one of the simplest nutrition habits with one of the biggest returns.
