I love healthy fats like olive oil, nuts and parmesan - they absolutely have a place in a balanced diet. But sometimes you don't need as much oil to create an incredibly flavourful sauce.

Directions for Creamy Yogurt Pesto Sauce

  1. Add all ingredients to a food processor or blender.

  2. Blend until relatively smooth.

  3. Taste and adjust seasonings to taste.

Ingredients

  • 1 cup fresh herbs - roughly ½ cup basil, ¼ cup parsley + ¼ cup chives (or ½ cup each parsley and basil + 1 clove garlic) *this recipe is VERY forgiving - this is just rough amounts

  • ¼ cup Greek yogurt (or 100g)

  • 1 tbsp Dijon mustard

  • 2 tbsp avocado oil mayo (or 30g)

  • Squeeze of fresh lemon juice

  • ¼ tsp sea salt 

 
 

Notes

How to Serve - This herb pesto is incredibly versatile. Try it:

  • Spooned over grilled chicken

  • Tossed with shrimp or salmon

  • Drizzled over rice or quinoa bowls

  • As a dip for raw vegetables (consider adding a little more Greek yogurt to create a thicker sauce)

  • Dolloped onto grilled or roasted vegetables

Meal prep - Store in an airtight container in the refrigerator for up to 4-5 days.
