I love healthy fats like olive oil, nuts and parmesan - they absolutely have a place in a balanced diet. But sometimes you don't need as much oil to create an incredibly flavourful sauce.
Using Greek yogurt gives this recipe a creamy texture while letting the fresh herbs shine.
Directions for Creamy Yogurt Pesto Sauce
Add all ingredients to a food processor or blender.
Blend until relatively smooth.
Taste and adjust seasonings to taste.
Ingredients
1 cup fresh herbs - roughly ½ cup basil, ¼ cup parsley + ¼ cup chives (or ½ cup each parsley and basil + 1 clove garlic) *this recipe is VERY forgiving - this is just rough amounts
¼ cup Greek yogurt (or 100g)
1 tbsp Dijon mustard
2 tbsp avocado oil mayo (or 30g)
Squeeze of fresh lemon juice
¼ tsp sea salt

How to Serve - This herb pesto is incredibly versatile. Try it:
Spooned over grilled chicken
