Crispy Air Fryer Meal Prep Potatoes

These crispy air fryer potatoes are one of my favourite simple meal prep staples - easy, satisfying, and supportive for blood sugar and gut health.
One thing many people don’t realize is that cooked and cooled potatoes form something called resistant starch. This is a type of carbohydrate that resists digestion and instead helps feed beneficial gut bacteria. Supporting gut health and blood sugar regulation becomes especially important in perimenopause and menopause, when cravings, energy crashes, and digestion changes can become more common.
The best part? You don’t need to make complicated “health foods.” If you already prep potatoes ahead of time, you’re already creating resistant starch naturally.
I love boiling a big batch at the beginning of the week, then reheating them in the air fryer for crispy potatoes in minutes.
Directions for Crispy Air Fryer Meal Prep Potatoes.
Wash potatoes and place in a large pot.
Cover with water, add a pinch of sea salt and bring to a boil.
Boil until fork tender, about 12-18 minutes depending on size.
Drain and allow potatoes to cool fully.
Store in the fridge for meal prep throughout the week.
When ready to eat, toss potatoes lightly with olive oil, salt, and desired seasonings.
Air fry at 400°F for 10-15 minutes, shaking halfway through, until crispy and golden.

How to Serve - Delicious with cooked greens, or roasted veggies, eggs and/or any meat - chicken, steak, pork or salmon.
Meal prep - Great for easy meal prep and quickly creating balanced meals throughout chaotic weeks. Added bonus: cooling potatoes before reheating helps increase resistant starch content which is great for gut health.
Seasonings - Anything goes! Some ideas: smoked paprika, garlic powder, Italian seasoning, oregano, black pepper.
